Chocolate Muscle Mousse Muffins


Still baking with the Chocolate Muscle Mousse those delightful little devils at Muscle Mousse sent me, this time in muffin form! 


I got the recipe from the BBC good food website, here's the link in case you want a gander:
The recipe isn't the most the healthy in the world but I was feeling cold and weak so in went the sugar and oil!

 Ingredients:
2 medium egg
125ml vegetable oil
250ml of semi skimmed milk
200g golden caster sugar
400g of self raising flour 
or the same amount of plain flour plus 3 tsp of baking powder
1 tsp salt
1 scoop of Chocolate Muscle Mousse
Any extras you want to add, chocolate chips, dried fruit etc etc

Heat oven to 200C/180C fan/gas 6. 


Line 2 muffin trays with paper muffin cases.


 In a large bowl beat the eggs lightly with a handheld electric mixer for 1 min, I went cave man style and used a hand whisk.


 Add the oil and milk and beat until just combined then add the sugar and whisk until you have a smooth batter. 


Sift in the flour and salt (and baking powder if using) then mix until just smooth, this is wear I added a scoop of Muscle Mousse, be careful not to over-mix the batter as this will make the muffins tough. 


Stir in the chocolate chips or dried fruit if using. As I was feeling indulgent I went for chocolate!


Fill muffin cases two-thirds full and bake for 20-25 mins, until risen, firm to the touch and a skewer inserted in the middle comes out clean. 


If the trays will not fit on 1 shelf, swap the shelves around after 15 mins of cooking. Leave the muffins in the tin to cool for a few mins and transfer to a wire rack to cool completely.

Muscle Mousse Chocolate Cheese Cake

This is another recipe I made using the Chocolate Muscle Mousse that those delight little devils at Muscle Mousse sent me!

 Again this is a pretty easy recipe as I have not become a master chef over night, I got this recipe from the Mousse Kitchen on the Muscle Mousse website check it out here


The recipe is for a backed cheese cake but I just chilled mine, added some chocolate drops for a bit of class and said job done!


Ingredients:


4 scoops of Muscle Mousse

1 tbsp of cocoa
300g low fat cream cheese
500g of quark
200g digestive biscuits 
2 tbsp of peanut butter or coconut oil  ( I thought I had peanut butter in my cupboard, but I didn't so I used butter, true story! )


Take your biscuits and finely crush them; either by putting them into a sandwich bag and attacking them with a rolling pin, or if possible, with a blender. Separately melt the peanut butter/ coconut oil using a pan or microwave and then stir in the crushed biscuits until fully coated. Pour into an 8 inch loose bottomed cake tin and press down as tightly as possible.
Now into a separate bowl, add your quark, cream cheese, cocoa, & Muscle Mousse. Beat the bowl as hard as you can as you’ll need to ensure there are no lumps of powder remaining.
Pour the mixture onto the biscuit base and level it out, them whack it in the fridge and leave it for at least 4 hours.
I found the cheese cake quite heavy and  as I have mentioned in other posts sugar has properly destroyed my sense of taste so I would add some sugar sorry, not sorry!

Muscle Mousse Pancakes

I was kindly sent some Chocolate Muscle Mousse by those lovely people at Muscle Mousse to use in my baking.

There are other flavours available so check out their shop if this recipe inspires you to make some protein packed pancakes!

I didn't follow the recipe word for word mainly because I had wheat flour in my cupboard and I forgot to add the baking powder!

Ingredients:

80g of plain white flour
1 egg
25g of Muscle Mousse, 1 scoop.
Water, I used 200ml but the recipe asks for you to add little by little until you make a pourable batter.

Really simple instructions which is great for me because I am hardly Mary Berry.

Just plonk everything into a bowl, whisk it together until it bubbles then fry in a pan! I did attempt to toss my pancakes but it was all a bit embarrassing!

This recipe is quick, easy and you can top your pancakes with anything you like so stop reading and get baking!
